One of the favorite recipes we share with our guests is Green Chilaquiles, a traditional and delicious breakfast from Mexican cuisine that uses day-old tortillas. Below, we detail the ingredients and preparation:
Ingredients
- 8 medium tomatoes
- 1 serrano or jalapeño chili
- 1/2 white onion
- 2 garlic cloves
- 1/2 bay leaf
- Pinch of dried oregano
- Pinch of dried thyme
- 1/2 teaspoon of salt
- 1/4 cup of low-sodium chicken broth
- 1 tablespoon of corn oil
- Vegetable oil for frying
- 12 6-inch corn tortillas
- 2 large eggs
- 1/2 cup of Monterey Jack cheese
- 2 tablespoons of crumbled fresh cheese
- 3 tablespoons of finely chopped white onion
- 1 tablespoon of finely chopped fresh cilantro
- Fresh cream for garnish
Preparation
- To make the green sauce, cook the tomatoes, chili, onion, and garlic in a pot with water until soft. Then, blend them with the broth and spices.
- In a pot, heat the corn oil and add the green sauce, cooking over low heat until slightly thickened.
- Fry the tortillas in hot oil until golden and crispy. Then, drain and cool them.
- In the hot green sauce, add the beaten eggs and stir until incorporated.
- Add the fried tortillas to the sauce and gently mix until well coated.
- Sprinkle Jack cheese over the chilaquiles and let it melt.
- Serve the chilaquiles garnished with fresh cheese, onion, cilantro, and fresh cream.
