One of the favorite recipes we share with our guests is Green Chilaquiles, a traditional and delicious breakfast from Mexican cuisine that uses day-old tortillas. Below, we detail the ingredients and preparation:

Ingredients

  • 8 medium tomatoes
  • 1 serrano or jalapeño chili
  • 1/2 white onion
  • 2 garlic cloves
  • 1/2 bay leaf
  • Pinch of dried oregano
  • Pinch of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 cup of low-sodium chicken broth
  • 1 tablespoon of corn oil
  • Vegetable oil for frying
  • 12 6-inch corn tortillas
  • 2 large eggs
  • 1/2 cup of Monterey Jack cheese
  • 2 tablespoons of crumbled fresh cheese
  • 3 tablespoons of finely chopped white onion
  • 1 tablespoon of finely chopped fresh cilantro
  • Fresh cream for garnish

Preparation

  1. To make the green sauce, cook the tomatoes, chili, onion, and garlic in a pot with water until soft. Then, blend them with the broth and spices.
  2. In a pot, heat the corn oil and add the green sauce, cooking over low heat until slightly thickened.
  3. Fry the tortillas in hot oil until golden and crispy. Then, drain and cool them.
  4. In the hot green sauce, add the beaten eggs and stir until incorporated.
  5. Add the fried tortillas to the sauce and gently mix until well coated.
  6. Sprinkle Jack cheese over the chilaquiles and let it melt.
  7. Serve the chilaquiles garnished with fresh cheese, onion, cilantro, and fresh cream.
