A Favorite Mexican Style Breakfast

At Resorts by Pinnacle in Puerto Vallarta, guests can enjoy the luxury of having their own fully equipped kitchen in the comfort of their suite. While being surrounded by a variety of amazing restaurants in the Romantic Zone, it’s always nice to have the option to prepare a delicious meal in your own space. Today, we’re sharing a recipe for traditional Chilaquiles Verdes, a classic Mexican breakfast dish that is perfect for using up leftover tortillas.

Ingredients:

  • 8 medium tomatillos
  • 1 serrano or jalapeño chile
  • 1/2 white onion
  • 2 garlic cloves
  • 1/2 bay leaf
  • Pinch of dried oregano
  • Pinch of dried thyme
  • 1/2 teaspoon salt
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon corn oil
  • Vegetable oil for frying
  • 12 6-inch corn tortillas
  • 2 large eggs, beaten
  • 1/2 cup shredded Monterey jack cheese
  • 2 tablespoons crumbled queso fresco or mild feta cheese
  • 3 tablespoons finely chopped white onion
  • 1 tablespoon finely chopped fresh cilantro
  • Crema fresca for garnish

Preparation:

  1. To make the salsa verde, boil the tomatillos, chile, onion, and garlic in a pot until soft. Blend the boiled vegetables with oregano, thyme, salt, and broth until smooth.
  2. Heat corn oil in a pot, add the salsa verde, and simmer until slightly thickened. Keep warm.
  3. Fry the tortilla chips until golden brown, then drain and cool.
  4. Add beaten eggs to the salsa verde, then toss in the chips until they soften. Sprinkle with Jack cheese and let it melt.
  5. Divide the chilaquiles onto plates, top with queso fresco, onion, cilantro, and crema fresca. Serve immediately.
